Hello again, my minions!

I thought since I was on a roll, I might as well do another blog posting.

This is on one of the projects we have started since moving to the bayou.

The dear hubby read an article about turning compost into actual dirt – so thought he would give it a go.

We allowed the lawn (almost an acre!) grow for two weeks at a time. We collected all the grass clippings and started piling them in a particularly sunny spot on the property. After a week, he manually turned the clippings over and watered them down a few times.

Two weeks ago, he made a concoction of water, beer, soda and ammonia and attached it to a nozzle that hooked to the sprinkler. He gave everything a nice little soaking, while I mowed the lawn again and put all additional grass clippings in the pile. Oh, I forgot to mention, we also cleaned out the refrigerator a few times and had things like moldy cauliflower, bread crumbs and even some coffee grounds in the mix. He then used a small cultivator attachment for our weed eater to turn things over.

We had to fall a dead tree and used it as a border around our little compost heap.

For the next week, he watered the area a little each evening.

Finally, late Sunday evening, he decided to drop a few seeds on the ground. Now, mind you, these seeds were not pretreated or anything – they came right out of the package (we got a great heirloom mix from Eden Brothers at www.EdenBrothers.com ). Hoping for some growth before we got too late in the season.

Again, every evening for 4 days, he watered.

And behold…on the 4th day – life sprang forth!! He must have done something right.

Just goes to show ya… if you don’t have decent soil for growing vegetation… make it!

Now, we do live in the great state of Louisiana… so decent soil really isn’t much of an issue… but this is just an added bonus. I won’t have to add any potting soil or anything to me planters when I plant all my herbs!!

Super excited about this! And it’s renewable, sustainable, and downright good for you!

Now…about keeping the critters out – the next challenge!

Yoke to the Throat – A Prepper’s Guide

The following is a blog post via my husband –

Bringing up the idea of self-defense to non-dedicated people or youth can be challenging. I have even had clients that have hired me to get them completely “ready” for what they believe is coming, and still back away from the idea of learning self-defense or hand-to-hand combat.

I recently watched a movie called ‘You’re Next’. In this suspense thriller, the heroine used little to no recognizable hand-to-hand combat moves, except for one.

I have completed, trained and been an instructor for martial arts for over 20 years. And in taking all that knowledge and trying to figure out the very best single moment, movement or strategy to teach someone in less than 5 minutes comes down to only one technique.

It doesn’t matter who you are. You could be a 13-year old girl walking home from school and a stranger tries to pull you into his unmarked van; a 72-year old woman walking down the street that is assaulted by a purse snatcher; a young freshman confronted by the senior class bully, or even a 16-year military veteran doing building clearing and having a weapons malfunction.

One motion, haphazard or perfect.

One target, whether struck or missed.

This technique always gets the attention of your attacker.

Boys and girls, if there was one thing that every person should know, it’s the ‘yoke to the throat’ move.

The steps to accomplishing this move are quite simple.

Step One:     Face your opponent

Step Two:      Put your hands up little more than chest height, palms facing your attacker

Step Three:   Look your aggressor in the eye

Step Four:     With your dominate hand, put your four fingers together and hold your thumb out.  This will form an “L” shape with your hand.

Step Five:  With all your might and fear, in a straight line from where your hand currently is, put the webbed part between your thumb and those fingers through your aggressor’s throat.

Step Six:   Quickly return that hand to its previous position.

Although results will vary, the minimum you will get is your aggressor flinching backwards, grasping for their throat in terror because they are unable to breath. If you executed this move correctly, you will have collapsed your aggressor’s throat, damaging it to the point that they can taste blood, reduced to coughing fits and truly unable to breathe. In MMA, there is one piece of advice every coach gives their competitors in some form or fashion… make your opponent taste blood.

At this point, your aggressor has been rendered a useless victim, giving you time to flee.

When the human body is struck and our mouth filled with the taste of our own blood, it activates the “fight or flight” mechanism in our brain. When we can’t breathe because there is something wrong with our throat, we panic, like someone drowning. I have never read a police report that used the words “fear” or “panic” to describe the attacker.

I am pretty sure that Kelly came out of the womb with a K-bar and .45 in hand, ready for the zombie apocalypse!

He was born in 1972 and raised by a Vietnam era veteran. As a child and young adult, he was trained by another Vietnam Vet Navy Seal. Between these two individuals, as well as a host of other characters, his most impressionable years taught him to be prepared for most anything.

In 1993, he became the lead survival instructor for the Specialized Training Institute in northern California. Three years after that, he enlisted in the US Army infantry.

2002 saw him employed for the Department of Defense as a law enforcement officer and security instructor.

And finally, in 2008, he started his own private non-profit survival and prepper academy.

Kelly and I are preppers, if nothing else. Now that doesn’t mean we buy into every conspiracy going, but it means we believe in being prepared. Prepared for what? Anything!

Eventually, our plan is to go completely off the grid and thrive with only those items that we can grow, cultivate, and create ourselves. In preparation for this, we are starting to play with recipes, as well as come up with our own.

Our first attempt at home made cottage cheese happened yesterday!

Kelly thought that Alton Brown’s recipe sounded pretty easy and was a good place to start. Below is the process at each stage – hope you enjoy!

The initial recipe calls for bringing a gallon of skim milk up to 120 degrees F. We opted for whole milk (I know, more fattening, but oh so good!)

Once temp has reached 120 degrees (be sure and use a candy thermometer to get accurate temp), remove it from heat source and slowly add 3/4 cup vinegar. This is the process by which you will curdle the milk and create the curd.

Cottage Cheese 3Keep in mind, the more you stir after adding the vinegar, the smaller your curd will be. We stirred it a bit, just until we could see curds beginning to form. This allows the curd to separate from the whey. Cover and allow to sit for about 30 minutes. While it’s cooling, prepare a colander and a tea towel or cheese cloth – you will be pouring the mixture into the cloth.

After cooling, Kelly poured the mixture into the colander and allowed it to drain for 4 or 5 minutes. Cottage Cheese 4

After it has drained, wash the curds with cold water. Start gathering up the edges of the towel and twist to form a ball. Slowly work the curds in the towel and squeeze – this will help remove moisture from the curd.

Now, transfer the curd to a small bowl – and season to your liking! We added salt and a bit of pepper. If you stir the curd around, it will break it up a bit. When you are ready to serve it, you can add a little heavy cream. Kelly and I do like runny cottage cheese, so we opted for just a touch of heavy cream.cottage Cheese 6

I am an eternal skeptic… so I was a bit leary of how homemade cottage cheese would taste. I swear, I will probably never eat store bought again! This was so much better! You could actually taste the cheesiness of the curd, not additives and bizarre flavorings!

So, again, I ask you – which one would you rather eat?
